糙米营养食品糙米营养食品将以糙米为主要成分的淀粉添加进热糖液中揉和后，蒸煮α化。添加进适量的干燥桑叶粉、西番莲粉等强化营养的植物粉与富含氨基酸的蛋白分解物，如牡蛎粉、液化鱼肉蛋白或纳豆等，搅拌捏合压延后烘焙成为制品。用这种方法制造轻便小食品，其目的是为了食用方便，营养丰富，味道佳美，又易保存，可作为理想的救急食品。实例1将900克糙米粉、100克蕨粉、20克食盐混合，投入1公斤含300克黑少糖的沸水溶液中，充分揉合后做成丸子状在蒸锅内蒸近1小时。将20克植物粉（干燥桑叶粉、西番莲、艾粉）和若干水用捣米杵搅拌，捏和搅拌时配进牡蛎粉30克即得粘稠性、延伸性好的米粉团。也可用液化鱼肉蛋白代替牡蛎粉。案板上薄薄撒上一层热糙米粉，迅速将粉团用擀面杖擀成面片，切成长方形、放入烤炉内先用文火干燥至稍硬一些后，在150℃下烘焙15分钟，成为无吸湿性、松脆味美，具有咬劲的食品。该食品保存性极好（可保存1年以上），营养又丰富，且食用方便，可作救急食品用。除蕨粉外还可使用甘薯淀粉、小麦淀粉、马铃薯淀粉等。实例2将900克糙米粉、120克玉米淀粉混合，迅速分批倒入1公斤多含蜂蜜或葡萄糖的热水中，充分揉和，制成丸子状，与实例1同样用蒸锅使淀粉完全α化后，混合进50克纳豆、30克艾粉、20克食盐，用捣米杵搅拌成粘稠米粉团。按实例1相同方法压延成片状，切断、干燥、加热最后烘焙成制品。糊化的淀粉和纳豆的蛋白质分解物亲和，并和艾粉的纤维质相结合，成为酥脆的营养食品。
