变性作用分子式：CAS号：性质：天然物质，最主要的是蛋白质及核酸等，在pH值改变，加入洗涤剂、有机溶剂、盐、尿素等，加热，剧烈搅拌，超声震荡或紫外辐射下发生的分子结构变化的现象。蛋白变性作用可能涉及到氢键断裂，使得整齐排列的天然蛋白结构松弛而变成杂乱的结构。因失去非共价键而失去二级和三级结构，从而引起构造的改变。变性会引起蛋白多肽链的展开和核酸螺旋形结构的解体。这一变化可能会同时伴有溶解度、物理性质和生物活性的改变。变性作用一般是不可逆的，但某些情况下可逆，这完全由处理方式决定。变性作用能改变物质的物理、化学和生物学特性，如溶解度或酶活性降低，失去天然生理功能，出现游离SH基，更易发生水解等。
