喷雾干燥用喷雾器将料液喷成雾滴分散于热气流中,使料液所含水分快速蒸发的一种干燥方法。所处理的料液可以是含水量达75%以上的溶液、悬浮液、浆状物料或凝胶等。由于雾滴直径很小(10~60μm),物料的临界含水量很低,即使达到完全干燥时,物料温度也不超过干燥介质的湿球温度。单位体积物料的表面积很大(100000~600000m2/m3料液),所需干燥时间极短(以s计),所以喷雾干燥适用于热敏性物料的干燥,如牛奶、咖啡、蛋品、血浆、抗菌素及染料等。喷雾器是喷雾干燥的关键设备,它对喷雾干燥的技术指标和产品质量影响极大。喷雾器的基本类型有:①离心式喷雾器(图1)。主件是高速旋转(3000~50000r/min)的有切向叶片的圆盘,将料液送入圆盘中心,在惯性离心力作用下被抛出,形成雾滴。它适用于悬浮液和浆状物料的分散。②压力式喷雾器(图2)。使液体在高压(3~20MPa)下,经喷嘴内的切线通道从小孔(孔径为0.5~0.8mm)喷出,分散而成雾滴。③气流式喷雾器。利用压缩空气或过热蒸汽(200~500kPa),通过喷嘴时的高速流动,抽吸料液并将它分散成雾滴。 喷雾干燥器内物料与气流的流向,可根据物料性质和最终含水量的要求确定。逆流操作的热效率高,但产品的最终温度较高。目前,生产上用得较多的是并流操作的喷雾干燥器,可防止产品过热。喷雾干燥器可从料液直接获得粉末产品,不仅综合了蒸发、结晶、颗粒分级及粉碎等操作,而且所得产品的粒度均匀,有速溶性。喷雾干燥器的缺点是固气比很低,设备体积庞大(见彩图),体积传热系数小,热效率较低(小于40%)。
