食品卫生食品卫生foodhygiene预防医学的分支学科。其任务是研究食品中存在的、威胁人体健康的有害因素的种类、来源、性质、作用、含量水平和控制措施,以提高食品安全性,预防食源性疾病,保护食用者健康。食品中可能存在的有害因素按来源分4类:①食品污染物。在生产、加工、储存、运输、销售等过程中混入食品中的物质。一般也包括生物性有害因素(如细菌、病毒等)和放射性核素。②食品添加剂。③食品中天然存在的有害物质,如大豆中存在的蛋白酶抑制剂。④食品加工、保藏过程中产生的有害物质,如酿酒过程中产生的甲醇、杂醇油等有害成分。有害因素按性质可分为生物性因素、化学性因素和放射性因素3类。食品中可能存在的有害因素,其性质、作用各不相同,在食品中含量水平的监测研究方法和允许的限量也不同。对食品中可能存在的有害因素的控制措施主要是依照道德规范、法律规范和技术规范在全社会开展食品卫生工作:政府设立机构,依法进行食品卫生监督检验;制定食品卫生标准和管理办法等;向群众和食品生产经营人员宣传卫生知识,自觉遵守卫生法规、卫生标准,抵制不卫生的行为。
